In the middle part of Myanmar, is the town of YeNanChaung, famous for its oil wells. The fragrances of the Neem trees overwhelm the whole town and this alone can make one consider the town of YeNanChaung, as his or her hometown. Another thing which will make you consider staying there is that this is the hometown of the crispy and delicious fried lablab beans, which the people of Myanmar enjoy very much. |

Now, we'll like to present to our audience, the process of how the crispy and delicious tasty fried lablab beans are made. Firstly, we have to soak the lablab beans in a tank, filled with water, for a whole night. By doing so, we'll be able to easily remove the husks from the lablab beans. A tank can hold 20 baskets of lablab beans. When removing the husks, it is important to remove them quickly, using both hands, and when you observe the way, the husks are being removed; they look like dancers, dancing to a certain beat. Those husks, which cannot be removed from the beans, are called "Sone Pyuu" which means "black sheep", as they differ from the other beans. These black sheep beans are left to dry in the sun for 4 days, and then soak again in water, and their husks remove later on. |

After the husks are removed, the beans are rinsed, to make them moist. To obtain a crispy and delicious flavour, we knead the beans with Tapioca powder. After that, we put the beans into a large frying pan filled with oil. For fueling the fire to cook the oil plum seeds are used to obtain strong intense heat. Lablab beans should be fried while the oil is boiling and bubbling in order to obtain the crispness and flavour. We have to stir the beans constantly so as not to let them scorch. When the beans are cooked we take them out of the frying pan and then sift them with a sieve or a sifting machine. When sifted with a sieve, oil is retained in the beans, and thus you get fried crispy lablab beans with oil, which adds to the flavour of the beans. When sifted with a machine, all the oil is soaked be the machine thus the lablab beans do not taste as delicious as being sifted with a sieve. |
