Roasted Lablab beans from Zalun

It is a traditional custom in Myanmar, for roasted lablab beans to be served with green tea when people sit together and chat, or when they talk business. These beans are a favourite of the Myanmar people, as they are crispy and good to munch, while passing the time and its cost is quite affordable to most people.

The first step is to soak the beans in water, which is mixed with turmeric, at least 3 days until they swell, and then you sift them of water and then put in a basket, for one night. Then cover the basket with a gunnysack. Later on, the beans are taken from the basket and wiped dry with a cloth. Then salt is roasted on the stove, while the beans are put on the drying platform; the beans are rubbed with clean cloths in order to make their husks break away. The drying platform is right besides the stove, where lablab beans are roasted in a big pan. The heat from the stove also gives heat to the drying platform where the roasted lablab beans. When the roasted salt is ready, you have to take the beans from the drying platform, put them in the pan and roast them until they become red and crispy, and then you can sift the beans. And later you again, sift the beans from the husks and the beans which do not reach quality, are set aside.

Then finally, tasty and nutritious roasted lablab beans are obtained.
The above mentioned beans are a favourite take-away gift for visitors who come to visit Zalun, a city in lower Myanmar which is famous for its Pyi Taw Pyan Pagoda and is visited by pilgrims from all over the country.
